Creative ways to use your leftovers? Well, we have it all, everything from budget friendly healthy choices to heartwarming comfort foods.
Cooking and eating is my passion. I am in no way a culinary expert, I have never been to culinary school, or have had any culinary training. I am a Grandma-taught, mommy-taught, and self-taught home cook. I learn from making mistakes, watching a ton of cooking shows, and drooling over one too many cooking magazines (if that is such a thing). All I know is when I have a bad day the kitchen becomes my happy place. Turn up the music, pour a glass of wine, and just cook. It always brings a little peace and clarity to my life.
When I moved in with my high school sweetheart, Greg, whom I eventually married. I was told a list of foods he didn’t like, spinach, Brussel sprout, parsnips, and any of that “fancy weird food like rice pilaf.” All I could think is challenge accepted!! So… over the last 12 years, I have gotten him to eat and appreciate all those yummy veggies and then some.
Yes! His mother is still in disbelief.
Yes, he is still very much a meat and potatoes type of guy. However, he does eat at least two veggies with dinner almost every night, and actually, enjoys them… for the most part!
I am a little weird because I am a girl that only has an occasional sweet tooth. I have always preferred savory over sweet. I am horrible at following directions, baking is more about accurate measurements and follows steps. I prefer guidelines, things I can change and do my own thing… yeah, I am rebelling. Which means I am more of a cook than a baker, sorry to disappoint.
One more real life fact, I have an obsession with cheese…no, really my sister bought me cheese for Christmas and it was the best gift ever! Really!! A day without cheese is my house is the day hell freezes over!
Above all else, my most important role is Mommy!! I never knew how much one could love another until my daughter, Jane, came along. Then, when I thought I couldn’t love anymore, that my heart was filled to the brim, my son entered my life and I was flooded with joyful, frustration, anxiety and love.
Jane is my crazy 5-year-old. She is one tough cookie, she has been through a lot but we are blessed it has never been serious. We had to fight for her health in the beginning and if you would like to read more about that just click on the link! She has overcome a lot and never let her struggles define her, always determined to be a “normal” kid. Then, just this past year, she was diagnosed with Apraxia of Speech and Asperger’s Syndrome. Yep, never a dull moment with her, and the journey is just beginning.
Eli is my little man cub. Not even a year old and I can already tell he is going to be a handful. His smile can melt the coldest of hearts, his laughter is contagious even on someone’s worst day, and he can give an evil stink eye when he doesn’t like what you said. He is stubborn and will scream for hours until you give in, never letting up. Blowing noses scare him, so we have to be sure when blowing our nose we do so in the other room (I know it’s a little odd, but look who his mother is).
These two brighten up my days, I honestly don’t remember what life was like without them. There are more posts about life with my minis, life, and weekly updates under the lifestyle section. Which may only interest my family who I could call more!
In my spare time, other than cooking, I love to read, do crafts with the kids, crochet, and spend time outdoors hiking and relaxing!
I’m a homebody. I mean I love to go out and have a good time, but for the most part, you will find me at home Friday and Saturday nights with my kids watching a new animated movie. Which brings up another fact… I own way too many DVDs.

I was raised as an Air Force Brat. Born in Grand Forks, North Dakota, but moved around a lot. My family finally settled in Colorado Springs, CO in 1997 where I met my husband in middle school (didn’t like him then but feel in love with him in high school). In 2005 (after I graduate from dental assisting school) we moved in together and decided to live in Denver, Colorado. We got married in 2010. Then when we found out we were expecting Jane in 2011 we moved to Casper, Wyoming, where he got a permanent job so he could be there for his kid. I know, he is a great dad, I am truly luck! In 2015 the contract was up and we re-located to Wichita Falls, Texas, bought our money pit, and found out we were expecting our son. I was fired from my dental assisting job while on maternity leave and decided to give the stay at home mom life a chance after 15 plus years of being in the work force. Life has been a crazy journey, and one day we hope to make it back to Colorado because that will always be home. As for right now, we are making the best of life, living it day by day.
