There is nothing better on a lazy Sunday than a slow-cooked family dinner… No need to change keep those sweats on and just enjoy the heartwarming aroma, the blessings of your child’s laughter and the amazing flavors of a good old fashion home cooked California Citrus Whole Roasted Chicken!
It’s funny how life unfolds itself over the years. I like to say the older I get the less I know. They say blood is thicker than water, and family will always be there. But what is family really? Is it just built on blood, or is it much more? Family are people that are there for you no matter what, even if you are fighting, even if you are mad as hell at the person, for whatever reason, even if that person let you down; family are people that you count on the people you can’t wait to share the good and the bad with, family are people that have your back during the hard times and lift you higher during the good times. They are the people that will always be honest with you even when the truth hurts.
Family, are the people you can’t wait to call when something exciting has happened. You know those people you are in a fight with but you just got engaged and you still find yourself picking up the phone to share the good news, and that person on the other end smiling through the anger because they are so happy for you. It’s almost as if the anger fades for just a moment because there is no one else you wanted to share that moment with. Yes, you still have the anger, you still have the disappointment over whatever the other issue was, but it can wait because you genuinely care about the person and want the best for them.
The past few years have been rocky, to say the least in our house. Between moving, having a baby, losing a job, medical obstacles, finding out we have a special needs kid, and a whole lot of other basic shit it has been an interesting, to say the least. Do you know what I have learned through all this? Well besides life is a Bitch.
It showed me how strong I really am, how strong my children are, and how much patients my husband truly has for my crazy! It showed us that family is far more than blood, we knew this before, but it took on a whole new form in our minds. We are slowly learning who deserves our time and who just wants to waste it, who really wants us in their lives and who is just doing it for the show, who is really in our corner and who really has the knife.
So when I make Whole Roasted Chicken, which is almost every Sunday, I image all my family gathered around just relaxing enjoying each other’s company, no drama, no petty issues, no one in the spotlight, there is no such thing as small talk or meaningless conversations because it is all good company. Yes, Texas is a bit lonely because my family is spread out everywhere but Texas, so I imagine everyone here and I smile because just the thought of everyone fills my heart with joy.
This whole roasted chicken is one of the easiest to make. A simple blend of Worcestershire, liquid smoke, and Savory Spice Shops California Citrus Blend (a spice blend made with….). Rub the blend all over the chicken, place chicken in the pan with olive oil and butter, and just let roast until internal temp of chicken reaches 165°F (74°C).

For those of you that are struggling and having a hard time finding peace, just think of who is in your true family, make this California Citrus Whole Roasted Chicken, paired with Fresh Herb Brussels Sprouts and Onion and Chive Whipped Potatoes, invite them over and relax you’re not alone.
California Citrus Whole Roasted Chicken
- 1 whole chicken
- 1 1/2 tbsp mayo
- 1 tbsp Savory Spice Shop California Citrus Rub
- 1/4 tbsp Worcestershire Sauce
- 1/8 tsp Hickory Liquid Smoke
- 1 tbsp butter
- 1 tbsp olive oil
- Pre-heat oven to 350.
- Rinse off the chicken and clean out the cavity. Pay chicken breast side up in cast iron skillet.
- In a small mixing bowl mix together mayo, Savory Spice Shop California Citrus Rub, Worcestershire, and liquid smoke. Rub all over the outside of the chicken. Place butter and olive oil in the cast iron skillet with the chicken. Place chicken in the oven and let cook 90-120 minutes, or until internal temp is 165°F (74°C).
- Remove from oven and allow to rest for 15-20 minutes.
- Carve and enjoy!!
