There is nothing better then a Sunday Roasted Chicken. Quick prep, simple ingredients, just toss that sucker in the oven and let it roast low and slow. While the Chicken is roasting your house starts to smell and fell homey, the board games come out, the TV playing in the back ground and you realize you and your family are still in your PJ’s because it is Sunday so who cares!
Yes! That sound like a fantasy but really this happens at our house at least 2 Sundays a month and it is great!
We have a system in place to where we have no house work on Sundays except to straighten up. Homework and work is caught up, bills are paid, and we unplug for the day. But this is a recipe so I will do my best to leave that on the Get Your $h!t Straight posts.
For now, let’s sink into this simple Smokey and sweet Chipotle Honey Roasted Chicken.
Anytime you make a whole chicken you want to make sure that it is completely thawed. If not, you may get someone sick because it will not cook evenly all the way through. Plus, if it does cook all the way through it will more then likely be as dry as sandpaper. So, step one makes sure the bird is not frozen.
Okay now that the hard part is done let’s get to making the chipotle honey wet rub. I like to use simple ingredients.
I start off with mincing (chopping a lot) a chipotle pepper. I know the recipe calls for the pepper and the sauce. The reason for this is that the pepper holds so much more flavor then just the sauce, so to get all the chipotle has to offer I recommend using both.
Take the minced Chipotle, the sauce and combine it with minced garlic, onion powder, Worcestershire, soy sauce, olive oil, the zest and the juice from one lime (if you don’t have a lime, 2 tablespoons lime juice will do the trick), and honey and whisk it until it is completely combined.
Now take that and rub it all over the Chicken.
I like to cook my chickens in a large cast iron skillet because then I can make gravy with the drippings, but any oven safe pan will work. Cover with foil it for the first part of the cook.
Place the Chipotle Honey Roasted Chicken in the oven and allow it to fill your house with the delicious sent of Sunday dinner. After 1 hour remove the foil and allow to crisp and brown up the last 30 minutes.
Once done (meaning when you stick a thermometer in the thickest part of the bird without hitting the bone the temp will read 165° Fahrenheit and the juices run clear) allow the bird to rest 10-15 minutes.
Resting it before you cut it allows the juices to settle helping ensure you have a tender juicy succulent meat.
Once resting you may carve into this slightly smoky slightly sweet with a hint of spice Chipotle Honey Roasted Chicken.
A sweet and spicy spin on a Sunday classic roasted chicken!
- 2 chipotle peppers minced
- 1/2 tbsp chipotle sauce from the peppers
- 2 cloves garlic minced
- 1 tbsp onion powder
- 1 tbsp Worcestershire
- 1 tbsp soy sauce
- 2 tbsp olive oil
- 1 lime zested and juiced
- 2 tbsp honey
- 1 3-5 lb Whole Chicken rinsed and Giblets removed
Preheat oven to 400 degrees Fahrenheit
In a small bowl whisk together chipotle peppers, chipotle sauce, garlic, onion powder, Worcestershire, soy sauce, olive oil, lime juice and zest, and honey.
Spread the mixture over the outside of the chicken. Place the chicken in a skillet or oven proof dish cover with foil and place it on the middle rack in the oven. Allow cooking for 60 minutes. Remove the foil and allow to cook for the remainder 30 minutes.
Once the chicken temp has reached 165° Fahrenheit and juices run clear. Remove from oven and allow to rest 10 minutes before carving,
