Every Friday the kids and I have a celebration to celebrate the end of the week! Good or bad we made it through the craziness let’s celebrate with Pizza Friday!

One thing I love to do is brush the crust with some garlic butter then sprinkle it with some parmesan cheese. Well, one week I made to much garlic butter and I thought hey why not just refrigerate it for later.
Fast forward to Sunday… yes, only 2 days. We were, go… go… go… all weekend with community events and just getting to know our new town. Before we knew it, it was time for dinner.
Side Note: If I had realized the time when we were in town (a good 20 minutes away from the house) we would have just found something in town.
So, what to do. The best think when you are in a jam is look in the fridge and see what you have. I was lucky I already had the pork chops marinating. Just needed to coat them with pretzels.

Honey Mustard Pretzel Pork with Roasted Veggies and Garlic Butter Potatoes
Then I saw the garlic butter, looked over and saw some potatoes. Simple enough.
Chopped tossed and dumped on to a line sheet. Then baked until soft on the inside and crispy on the outside.
Cooking tip: When in a bind for time, but want potatoes. Cut them into smaller pieces. The smaller they are the faster they will cook. If roasting cover with foil the first 10 minutes to lock in the heat, then uncover and allow to brown and cook!

Garlic Butter Potato Chunks
Ingredients
- 4 russet potatoes sliced into chunks
- 2 cloves garlic minced
- 4 tbsp unsalted butter melted
- 1 tsp salt
Instructions
- Preheat oven to 425 degrees Fahrenheit
- Take melted butter and mix in the garlic.
- Pour garlic butter over potato chunks and toss until everything is evenly coated.
- Placed on a lined baking sheet making sure not to crowd and stack the potato chunks.
- Bake for 30 minutes or until potatoes is fork tender. Serve and enjoy
