If you have ever made rice before and it’s flopped. I totally sympathize with you, I used to despise cooking rice! It is the most frustrating thing, it was either overcooked or burnt to the bottom of the pan.
Now we make rice and pilaf at least twice a month thanks to the instant pot. It really takes the work and worries out of making rice. Plus keep my grocery cost down. No more needing to by the 60-second microwave rice as a backup plan.
With you instant pot on sauté mode melt butter and sauté onion, celery, and mushrooms with a pinch of salt. After 5 minutes of sautéing add in garlic, pepper, paprika, and parsley.
Turn off sauté mode and add veggie stock, pasta, and rice. Give it a quick stir to combine. Close the lid make sure the valve is in the sealed position and press the rice button.
I know what you are thinking! How can something so fancy be so simple? However, folks, it is really that easy to make delicious, fresh, and fluffy Instant Pot Rice Pilaf.

Instant Pot Rice Pilaf
Ingredients
- 1 tbsp butter
- 1 small onion chopped
- 2 celery stocks chopped
- 4 baby bella mushrooms sliced
- ½ tsp kosher salt
- 1 clove garlic minced
- ⅛ tsp paprika
- 1 tbsp parsley
- 1 cup long-grain white rice
- ¼ cup raw spaghetti noodle bits
- 2 ¼ cup veggie stock
Instructions
- Place Instant Pot on Saute Mode. Melt butter and saute onions, celery, mushrooms with a pinch of salt for 5 minutes.
- Add in garlic, parsley, and paprika. Cancel saute mode
- Add in rice, spaghetti noodle bits, and veggie stock. Give it a quick stir. Place lid on make sure vent is in seal position. Then put it in rice mode.
- When the timer goes off, carefully rotate the vent valve to vent the vent position. Again be careful hot steam will vent out and if your hand is in the way you will get injured.
- Once completely vented you will be able to remove the lid, fluff the rice and serve.

I debated getting one for a long time, I thought “Is it really worth the cost?” Then mine was gifted to me for Christmas and I can say it has already paid for itself in no-fail rice making and it makes dry beans in less than an hour so I no longer have to worry about the high sodium counts in canned beans. Totally worth every penny in my opinion!!

I would say do it on the stove top, but honestly, I think every household needs an instant pot LOL. Besides I never got my rice pilaf as fluffy using the stove top as I do the instant pot!

For the longest time, I thought the instant pot was just another kitchen gadget fad, refused to buy one. So when it was gifted to me I thought sure why not I will give it a try and after having it for 8 months I can honestly say all the meals, sides, and preps (like dry beans, or stocks) I have made in it in half the time, I would say it pretty much already paid for itself!

Yes, everything you make in the instant pot will be quick and easy. One weekend I pulled out a roast and we got so busy I forgot to put it in the slow cooker or slow roast it in the oven. We still had a tender full of flavor (like it was cooking all day) roast for dinner and it only took 60 minutes in the instant pot (I included the time it took to pressurize and depressurize).
Instapots and Crock Pots are the best inventions ever! So many things to make without the hassle. I love this rice recipe! Such a versatile dish that can be added to anything.
Yes Yes Yes! Full disclosure I got rid of my crockpot because the instant pot has a slow cooker setting, I also got rid of my rice steamer and my small pressure cooker. Yep this one appliance cleaned me out and made space in the kitchen. LOL

You sure could!! As long as the water does not go past the max line mark.
Could you substitute brown rice in this recipe?
Yes, you can! But there are 2 things to keep in mind. First the liquid to rice ratio. Brown rice requires more liquid. Check the package directions for companies recommendation for the liquid to rice ratio for best results. Second, is brown rice has more of a grainy flavor then white rice so the flavor will be different then if you were to use white rice.
I am new to cooking. What is spaghetti noodle bits? Is the spaghetti noodle bits any uncooked pasta? If not where do you get it? Can I substitute?
You can either get a box at the store… I know Safeway has them or what I usually do (because who is needs an entire box of Spaghetti bits) is take about 10-15 Spaghetti noodles and break them into about 1/4 inch long bits.
And yes its uncooked then it just cooks with the rice.
And no substitutes, I have tried this recipe with gluten free pastas even quinoa based pasta and it gets soggy and gross.
Made this last night. 2 1/4 cups of broth or water to 1 cup of rice is too much. Came out soggy. Halfway rescued it in the microwave but next time I will use a lot less liquid.
I am really sorry that happened to you. I am always looking for ways to improve the site including adding notes to recipes to help home cooks avoid things like soggy rice. By any chance are you cooking at sea level or using short-grain rice. I would love to figure out why yours was soggy and mine has always come out fluffy.
