Okay so last week I talked about how I made a Cherry Peach Potato Hash and if you have read it you know that I was a mess in the kitchen that day. You were probably thinking “This crazy lady spoke about making Sea Bass and Bacon for dinner, we know what she did with the bacon but did she ever make that Sea Bass?” The answer is yes I did, and I am happy to report that the Maple Spice Sea Bass came together without any hiccups, like missing ingredients. Therefore this post will be short and sweet!
I love flavor combinations with multiple notes you know the kind that isn’t just sweet or just spicy, the flavors that balance each other out and make you crave another bite after bite after bite. Yeah, I know you love that too, makes eating much more enjoyable! That is what is perfect about this seasoning it’s a little sweet and a little spicy with depth and warmth!
First, you want to mix together brown sugar, maple syrup, salt, Worcestershire, liquid smoke (hickory flavored), black pepper, sage, ginger, smoked paprika, fennel, thyme, cayenne pepper, and nutmeg in a small bowl.
Now spread the mixture on top of your Sea Bass. Place in oven and bake, until fish is fork tender.

Just keep in mind when cooking you want this on the middle rake in the oven there is sugar in this blend, sugar burns easily, so make sure you use a baking liner on your baking dish or sheet to save yourself from a night of scrubbing.

Maple Spice Sea Bass
- 4 Sea Bass Fillets
- 1 tbsp brown sugar
- 2 tbsp maple syrup
- salt and pepper
- 1 tbsp Worcestershire
- 1 tsp liquid smoke (hickory flavored)
- 1/4 tsp ground dried sage
- 1/2 tsp ground ginger
- 1 tbsp smoked paprika
- 1/4 tsp fennel
- 1 tsp dried thyme
- 1/8 tsp cayenne pepper
- 1/2 tsp nutmeg
- Preheat oven to 400 degrees. Line baking sheet with baking paper
- In a small mixing bowl mix together brown sugar, maple syrup, salt, Worcestershire, liquid smoke (hickory flavored), black pepper, sage, ginger, smoked paprika, fennel, thyme, cayenne pepper, and nutmeg.
- Spread seasoning mix onto Sea Bass. Place Sea Bass on a baking sheet, place in oven and bake for 15-20 minutes until fish is fork tender.
- Allow to cool slightly, serve and enjoy
