Before we talk about this amazing beet hummus I have a confession to make. I used to be afraid of beets, anything that makes you pee in color was just a bit crazy to me. Then I found out it was not 100 percent true, and the health benefits outweigh fear I have, so why not try. The first thing I tried with beets was a sandwich, it included sliced beets, arugula, and goat cheese on a ciabatta roll, and I feel in love folks, it was love at first bite.
I found my love of beets then I saw a picture while standing in the check-out at my neighborhood grocery store, of a bright vibrant beet hummus. So, I just had to make it, but I didn’t have a recipe. What is a girl to do?
Well, that is when having a chef brother-in-law comes in handy. I just shoot off a text and he was kind enough to send me a recipe, one that I read, made once then a week later accidentally deleted, but thank goodness, I knew the gist of it and could recreate it, with less garlic.
There are many recipes out there with different steps and processes to making hummus, but I like to make things simple. Using simple, ready to use ingredients is my secret. Since everything is prepped and ready all you need to do is put everything except the garnish into the food processor and blend until smooth. Sometimes even if you use the proper measurements and portions the hummus may still be super thick or dry, if that is the case add an extra tablespoon of water and blend, continue adding 1 tablespoon of water and blending until smooth and has a dippable consistency.

Simple Beet Hummus
- 4 small red beets canned or precooked and vacuum sealed
- 2 cloves garlic
- 1 15 oz can chickpeas drained and rinsed
- 1/4 cup tahini paste
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 2-3 tbsp warm water
- 1/2 tsp ground cumin
- 1 tsp kosher salt
- Place all ingredients (red beets, lemon juice, tahini, garlic, kosher salt, chickpeas, olive oil, water, and cumin) in a food processor and blend until well combined and smooth.
- Transfer the hummus to a bowl or serving dish garnish with sesame seeds. black pepper, and feta cheese. Serve or refrigerate until ready to serve.
