I make this hummus at least once a week! I can honestly say I have some in my fridge right now and will probably be snacking on it tonight while watching “This Is Us” and “New Amsterdam.”
Hummus without Tahini was something I worked into my diet because being in my late 30’s it is not as easy as it used to be to stay in shape and keep off those extra pounds that creep in from the ranch dip I also enjoy on my veggies. I also am a picky hummus eater because Tahini is a sesame paste and I am allergic to sesame seeds.
Since then I have really grown to love hummus not just as a veggie dip, but as a spread on my sandwiches, or even to replace the mayo in my tuna and chicken salad.
I have tried all the fancy varieties in the stores as well as half a dozen recipes, but this one is by far my favorite. It is silky smooth, slightly zesty because of the lemon, and has a little zip because of the garlic. Not to mention that it is cheaper to make your own hummus, but you control the quality of ingredients that go into it. So, there are no weird preservatives or fillers in your dip.
The Secret to a Smooth Hummus
Hummus has to be pureed that is what brings all the ingredients together. Many people use a food processor and others used a blender. But! I use a smoothie mixer and mix it all in my smoothie cup.
It is all about the blades. You want something that is going to finely puree your garbanzo beans. If you have a Vitamix you are good to go. For those like me, that can’t quite afford such a fine piece of kitchen equipment I have found that a smoothie mixer works best.
The food processor and my blender leave the mixture too grainy or too runny for my liking especially without the tahini to help to bring that silky-smoothness to the mixture. So my if you want a silky-smooth hummus without tahini try just making it in a smoothie cup with a smoothie blender next time.
How to Make Simple Lemon Garlic Hummus without Tahini
- Add the garbanzo beans, 2 tablespoons of water, the olive, the juice from the 1/2 lemon, garlic powder, and a pinch of salt into your smoothie blender or food processor. Process until smooth and creamy. If needed, add additional water to thin out the hummus and more salt to your taste.
- Sometimes the hummus to too thick to completely mix in my smoothie blender. If needed, add additional water to thin out the hummus and more salt to your taste.
- Store covered in the refrigerator for up to 7 days.
