A simple side dish that can be prepped and made in under 20 minutes. Natural and healthy, no chemicals or preservatives. Also, can be prepped in the same dish you will cook It in. Hard to believe it is all possible, but with Simple Salt and Pepper Asparagus recipe, the impossible just became possible.
Side dishes don’t have to be complicated to be full of deliciously flavorful. Sometimes all it takes is a few ingredients and less than 30 minutes to make a healthy satisfying addition to a great meal.
The first time I attempted to eat asparagus it was grayish-green, slimy, yet fibrous. It was absolutely dreadful. It was from a can. I did not eat it.
The second time I found some fresh at the store and I attempted to steam it. It was mushy, bitter, and not edible. Yet I kept hearing how good it was. I was starting to think they were crazy, or I just didn’t have good taste in food.
Then one day I was reading in some cooking magazine (can’t remember what one, this was years ago), and they recommended to roast it, the article claimed it gives it a depth of flavor. It also talked about how different thicknesses require different cooking times, common sense I know, but I was clueless about this green stick thing!
The next day I went to the store and found some medium sized asparagus, came home and stared at it. Was I really going to try this…again! Seasoning? I figured salt and pepper would do since I had no idea what herbs would go well with whatever flavor asparagus was.
Drizzled them with olive oil so they wouldn’t stick to the pan, sprinkled with salt and pepper, tossed to coat, and tossed in the oven for 15 minutes.
Now for the moment of truth. I took my first crispy bite of asparagus, followed by another, and another. Until I got to the end, it was hard and difficult to chew so I spit it out. That day I learned I loved asparagus and to cut off the bottoms before cooking them (to avoid the hard difficult to chew part).
Since that day Simple Salt and Pepper has been a go-to side dish, fast, flavorful, and minimum clean up. You just can’t go wrong!

Simple Salt and Pepper Asparagus
- 1 bunch asparagus
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp pepper
- Pre-heat oven to 350 degrees
- Cut off a 1/4 inch from the bottom of the asparagus. Lay the asparagus on a baking sheet. Drizzle with olive oil, sprinkle with salt and pepper and toss the asparagus until everything is evenly coated.
- Place baking sheet with the asparagus in the oven and allow to cook for 15 minutes.
- Remove from oven allow to slightly cool before serving and enjoy!
