Sundried Tomato Pesto Spaghetti is amazing solo or served as a side! Simple delicious herbs and garlic give the pesto a fresh taste. The sundried tomatoes add the perfect tang. Then there are the sunflowers giving it just the right touch of nuttiness!
The bonus is because it is made with olive oil there is no need to worry about any additional unhealthy fats in this dish.

If I do serve Sundried Tomato Pesto Spaghetti as a side dish what would the main course be?
Sundried Tomato Pesto Spaghetti
- 8 oz spaghetti noodles
- 1/4 cup olive oil
- 1/8 cup sundried tomatoes with juice
- 3 tbsp sunflower seeds shells removed
- 1 clove garlic
- 1/8 cup fresh parsley
- Grated Parmesan Cheese
- Cook spaghetti noodles according to package directions.
- While pasta is cooking make the pesto. Directions Below.
- Once pasta is done drain pasta and the noodles back into the pot you cooked them in. Pour Sundried Tomato Pesto onto the noodles and serve with a sprinkle of parmesan cheese.
Sundried Tomato Pesto
- Place all the ingredients in a food processor and blend until well combined and is as smooth as you can get it.
