About two years ago I realized how much food I was throwing out, it was an embarrassing astronomical amount. All I thought is there goes my last paycheck. Then I did some research and found out that I wasn’t alone. According to a Guardian report in 2016, roughly 50 percent of all produce in the U.S. is thrown away an approximate 60-million-ton worth annually.
The Environmental Protection Agency has found that wasted food is also the single biggest occupant in American landfills… YUCK!
Dr. Roni Neff a researcher at Johns Hopkins University stated in 2017 that if we were to recover all the wasted food, we could provide a 2,000-calorie diet to 84% of the population!! Reported to USA Today. Isn’t that insane… all the kids that go to school hungry could be feed and then some, but instead, we choose to waste it!
Can you afford to throw away $2,000 a year, and no I don’t mean on gambling or anything fun… I mean directly in the trash? Whether you can afford it or not why would you want to? Did you know that is how much the average American Household throws out each year? That is approximately $165 billion worth of food waste a year in this nation.
I know 2018 is still a few months away but it is never too early to decide to make a change for the New Year. Thanksgiving is a great time to start with this change. You already have a fridge full of those Thanksgiving Leftovers that you will reheat maybe once or twice get bored with and end up tossing. So why not use this opportunity to get those creative juices flowing and create new exciting meals using those leftovers along with a few other ingredients?
