Blue Cheese Chicken BLT Lettuce Wraps

These Blue Cheese Chicken BLT Lettuce Wraps are light yet filling and satisfying. Perfect for those hot summer nights!

Ingredients

  • 2 cups Rice and Quinoa Blend
  • 8 bib lettuce leafs
  • 4 strips bacon fried and crumbled
  • 1 cup leftover chicken chopped
  • 1/2 cucumber peeled and chopped
  • 1/4 medium red onion chopped
  • 4 tbsp sunflower seeds
  • 1/4 cup blue cheese crumbled
  • 1/2 tbsp dried dill
  • 16 cherry tomatoes sliced in half

Instructions

  • Make Rice and Quinoa Blend according to package directions
  • Take your bib lettuce and remove and clean the lettuce leafs. 
  • Fry up the bacon once fried remove it from the grease and allow to cool and drain on a paper towel-lined plate. Once cool crumble bacon.
    Chop up the leftover chicken, cucumber, and red onion.  
  • Place chopped chicken, cucumber, red onion, crumbled bacon, sunflower seeds, 3/4ths the blue cheese, rice and quinoa blend and dill in a large mixing bowl and mix together until well combined. 
  • Take the washed lettuce leafs and fill the center of the leafs with the mix in the bowl.
  • Garnish top of filled lettuce leafs with sliced cherry tomatoes and remaining blue cheese.  Serve and enjoy!!
