Blue Cheese Chicken BLT Lettuce Wraps
These Blue Cheese Chicken BLT Lettuce Wraps are light yet filling and satisfying. Perfect for those hot summer nights!

- 2 cups Rice and Quinoa Blend
- 8 bib lettuce leafs
- 4 strips bacon fried and crumbled
- 1 cup leftover chicken chopped
- 1/2 cucumber peeled and chopped
- 1/4 medium red onion chopped
- 4 tbsp sunflower seeds
- 1/4 cup blue cheese crumbled
- 1/2 tbsp dried dill
- 16 cherry tomatoes sliced in half
Make Rice and Quinoa Blend according to package directions
Take your bib lettuce and remove and clean the lettuce leafs.
Fry up the bacon once fried remove it from the grease and allow to cool and drain on a paper towel-lined plate. Once cool crumble bacon.Chop up the leftover chicken, cucumber, and red onion.
Place chopped chicken, cucumber, red onion, crumbled bacon, sunflower seeds, 3/4ths the blue cheese, rice and quinoa blend and dill in a large mixing bowl and mix together until well combined.
Take the washed lettuce leafs and fill the center of the leafs with the mix in the bowl.
Garnish top of filled lettuce leafs with sliced cherry tomatoes and remaining blue cheese. Serve and enjoy!!
