In a large pot cook up the oats. This recipe used quacker 3-minute steel cut oats and 1 minute rolled oats, so be careful when shopping if you buy another brand or one that is not labeled quick oats follow directions on pack. If you bought quacker quick cook steel cut oats and rolled oats place water in the large pot, once bubbling stir in 3-minute steel cut oats and cook 2 minutes. Then add in the milk, chia seeds, and the rolled oats and cook another minute.
Stir in pinch of salt, brown sugar, pumpkin spice, the cubed apples and peaches, and maple syrup.
Allow the oats to cool slightly and serve with an extra drizzle of maple syrup, sprinkle of brown sugar, and a little extra fruit whatever your heart desires.
