Leftover Turkey Crostini with Tomato Spinach and Garlic

8baguette slices 1 inch slices
20multi-colored cherry tomatoes sliced in half
½cupleftover smoked turkey
¼lbfresh mozzarella cheese
Melt butter in a deep skillet over medium heat. Place baguette slices in butter flip once and then let toast 2-3 minutes until the bread turns golden brown, flip and let that side toast up. Once both sides are golden brown remove them from the pan.
Place olive oil in the same pan you toasted the bread in. Add the onions, garlic, and salt to the olive oil. Allow onions to saute 2-3 minutes over medium-low heat until they are slightly translucent.
Add tomatoes, spinach, and turkey to the onions and allow to cook another 5 minutes.
While the tomato turkey mixture is cooking, layout toasted baguette slices on a baking sheet, pull apart the mozzarella and place it on top of the baguette slices. Place baguette slices under the broiler until cheese begins to melt 1-2 minutes.
Spoon the tomato turkey mixture on top of the baguettes sprinkle with parmesan cheese and serve.
