Ingredients
1stickunsalted butterdivided into 4 chunks
1lbred and white medley potatoes Cut into wedges
3carrots Cut into julianne strips
1tbspsea salt
¼tbspfreshly ground black pepper
Instructions
Preheat oven to 350 degrees.
Place carrots, potatoes, and butter into a cast iron skillet, sprinkle with salt and pepper. Place cast iron skillet in the oven and bake for 25 minutes.
Stir the potatoes. Turn-up oven temperature to 425 degrees and bake for another 20 minutes until potatoes start to brown.
Remove from heat, allow to cool slightly, and serve!
